So I’ve adapted this recipe from one of Mr Jamie O’s (you’ll probably see me referencing him quite a lot, he’s got quite good shortcuts and I’m impatient!). As you might have seen from my Instagram I make a lot of dishes which include grilled meat and a side of potato or rice. This means I often need a sauce or some sort of dip to go with it. However I don’t like buying things readymade, as I like to know what is going into my food, plus if I make it healthier I don’t need to hold back guzzling it all down! Plus, plus 🙂
Here is a recipe for some super easy, healthy coleslaw.
Serves: 2-3 people
Time: 5-10 mins (depends how quickly you chop!)
Ingredients
- 1/3 of a cucumber
- 1 medium carrot
- ½ a red onion
- 150g natural yoghurt
- 1 ½ tbsps of multigrain mustard
- 1 tsp lemon juice
- Pepper
Method
Chop the onion into thin strips
- Either – chop the remaining vegetables into short, thinly sliced pieces OR chop the carrot in half and the cucumber into half and then slice down the middle. Then use a peeler to slice into ribbons
- Drop the chopped vegetables into a bowl
- Scoop all the yoghurt and mustard into the bowl
- Add lemon juice and mix
- Then voila! There you have it… Add pepper to taste
So easy right?! You would think it would taste just like raita, but the mustard really gives it a different flavour. Mmm…
